Description

- Butter - 2.1 oz
- "Jubilee Cookies" - 9.2 oz
- Semi-soft cream cheese - 31.7 oz
- 70% Dark Chocolate - 14.8 oz
- Sugar - 10.6 oz
- Farm fresh eggs - 4 pieces
- Cocoa Powder - 2 tablespoons
- 33% Cream - 7 fl oz
- Chocolate shavings - to taste
Step by Step guide
Step 1
For the crust, crumble the cookies in a blender until fine crumbs form, add 60 grams of melted butter and 1 tablespoon of sugar. Mix thoroughly in the blender.
Step 2
Preheat the oven to 356°F. Evenly layer the crumbs at the bottom of a springform pan (26 cm in diameter), pressing down firmly. Place in the oven for 5 minutes.
Step 3
For the filling, melt 250 grams of dark chocolate in a water bath until liquid, then remove from heat and let it thicken slightly.
Step 4
Using a mixer, blend the cream cheese, 250 grams of sugar, and 50 grams of cocoa powder until smooth. Gradually mix in all 4 eggs. Then pour in the melted chocolate. Mix well.
Step 5
Pour the resulting mixture onto the cookie base, smoothing the top with a knife. Bake until the center is just set, about 1 hour 10 minutes (depending on your oven).
Step 6
Remove from the oven and let cool for 5 minutes. Carefully run a knife around the edge of the cake to detach it from the pan, but do not remove the pan. Then pour the glaze over the top.
Step 7
For the glaze, combine the cream, remaining chocolate, and 1 tablespoon of sugar in a saucepan and heat over low heat. Keep on the heat until the mixture is smooth.

Let the glaze cool slightly. Then, pouring it in the center of the cheesecake, allow it to spread evenly across the surface of the cake. Leave at room temperature for 1 hour.

Refrigerate the cake for 12 hours.
Step 10
After chilling, release the cheesecake from the pan and sprinkle with chocolate shavings. Before serving, let the dessert sit at room temperature for 2 hours.
