Ricotta Dessert with Rum Brownies

Ingredients

  • Ricotta cheese - 8.8 oz
  • Sponge Cake Base - 2 pieces
  • Candied fruits - 1.8 oz
  • Powdered Sugar - 3.5 oz
  • Kumquat - 1.8 oz
  • Cognac - 1.8 oz
  • Sugar - 3.5 oz
  • Chocolate - 0.7 oz
  • Water - 3 fl oz
  • Liqueur - 0 fl oz

Step by Step guide

Step 1

Prepare the filling for the dessert. Whip the ricotta cheese with powdered sugar and mix in the chopped chocolate, finely chopped candied fruits, kumquat (optional), cognac, and cinnamon. Place in the refrigerator.

Step 2

Using a round cutter, cut two circles from the sponge cake. Place one at the bottom of the mold, soak it with the prepared syrup (sugar, water, liqueur), add the ricotta mixture on top, then place the second sponge cake, soak it with syrup, and refrigerate to cool.

Step 3

Before serving, remove from the mold, spread a thin layer of the ricotta mixture on top, remove the ring, and decorate as desired.
