Clean the rowan berries, which should be harvested after the first frost, rinse them, soak in cold water, and let sit for 24 hours; then drain the berries in a colander, allow the water to drain, and soak them in cold water again, repeating this 2-3 times.
Step 2
Pour water into the sugar, boil to make a syrup, and pour the hot syrup over the rowan berries, then place it on ice for 24 hours.
Step 3
After 24 hours, remove the berries with a slotted spoon and boil the syrup for 20 minutes, then add the rowan berries to the syrup and cook over moderate heat for 20-25 minutes, until the syrup thickens and the berries become shiny. Do not overcook the rowan berries, as they will lose their juiciness and become dry and unappetizing.
