Royal Easter Kulich
Ingredients
- Dry yeast - 0.4 oz
- Wheat Flour - 14.1 oz
- Butter - 5.6 oz
- Milk - 3 fl oz
- Salt - a pinch
- Chocolate eggs - 3 pieces
- Egg white - 1 piece
- Sugar - 4.2 oz
- Raisins - 2.1 oz
Step by Step guide
Step 1
Warm the milk.
Step 2
Add the yeast, 50 grams of flour, and a tablespoon of sugar.
Step 3
Mix well and place in a warm place, covering with a towel.
Step 4
Soak the raisins in hot water.
Step 5
In a saucepan, mix the eggs, 100 grams of sugar, and a pinch of salt.
Step 6
Heat to 97°F, stirring with a whisk. Ensure that the egg whites do not curdle.
Step 7
The dough starter should rise well.
Step 8
Combine the dough starter and egg mixture in a deep bowl.
Step 9
Sift in the flour and knead the dough.
Step 10
Melt the butter.
Step 11
Before finishing kneading, add the butter, raisins, and flour if necessary.

Leave the dough to ferment for 1–1.5 hours at 28–86°F. Then, punch it down.
Step 13
Shape the finished dough into a ball and place it in a kulich mold. Bake at 180–392°F for 50–60 minutes.

In a blender bowl, pour in the egg white and add 1 tablespoon of sugar.

Whip well until the icing holds its shape.

Spread the icing over the surface of the kulich and sprinkle with confectioner's sprinkle.
