Description
You can replace the coconut flakes with cocoa mixed with powdered sugar in a 1:1 ratio, and corn syrup can be substituted with maple syrup.

- Shortbread Cookies - 12.3 oz
- Chopped almonds - 1½ cups
- Cocoa Powder - ¼ cup
- Powdered Sugar - ¾ cup
- Rum - ½ cup
- Light Corn Syrup - 3 tablespoons
- Coconut flakes - 2.8 oz

Step 1
Crush the cookies into crumbs using a blender and combine with the nut crumbs, sugar, and cocoa.
Step 2
Add the rum and corn syrup, mixing until a moist, dense mixture forms.
Step 3
Using a teaspoon, scoop out small portions, roll them into balls, and coat in coconut flakes.
Step 4
Place in a container and refrigerate, preferably for a couple of days, to allow the rum balls to soak and become juicy.
Step 5
Before serving, you can roll them in the flakes again.
