Rustic Bread (Pain de campagne)
Ingredients
- Wheat Flour - 24.7 oz
- Coarsely Ground Rye Flour - 5.3 oz
- Salt - to taste
- Water - 19 fl oz
- Dry yeast - 0.4 oz
Step by Step guide
Step 1
For the starter, mix 200 g of wheat flour, 50 g of rye flour, 5 g of fresh yeast, salt, and 175 ml of water. Stir and let it rest for 4 to 6 hours.
Step 2
Add to the starter 5 g of yeast, 500 g of wheat flour, 100 g of rye flour, salt, and 400 ml of water. Knead the dough, form a ball, and leave it in a bowl dusted with flour, covered, for 1 hour.
Step 3
Place the dough on a surface, knead it, form a ball, and cover it, letting it rest for another hour.
Step 4
Repeat this step and let it rest for another 30 minutes.
Step 5
On a floured surface, divide the dough into 2 parts, form balls, and let them rest for another 1.5 hours under a towel.
Step 6
Place the loaves seam side down on a baking sheet lined with a towel and dusted with flour, and make a circular cut on each with a sharp knife.
Step 7
Preheat the oven to 482°F.
Step 8
Spray the oven walls with water from a spray bottle, place the loaves inside, and bake for 5 minutes.
Step 9
Reduce the temperature to 428°F and bake for another 25 to 30 minutes.
