Rustic galette with tomatoes, mozzarella, and thyme
Ingredients
- Salt - to taste
- Wheat Flour - 10.6 oz
- Butter - 4.6 oz
- Milk - 2 fl oz
- Apple Cider Vinegar - 1 teaspoon
- Egg white - 1 piece
- Tomatoes - 6 pieces
- Thyme - 2 teaspoons
- Melted Cheese - 4.2 oz
- Olive Oil - 3 tablespoons
- Garlic - 1 clove
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a blender bowl with a knife attachment, add the flour and salt, then add cold butter cut into cubes. Chop the flour with the butter until it resembles crumbs.
Step 2
Next, add milk, apple cider vinegar, and the egg to the flour mixture. Knead the dough until it comes together into a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. The dough will improve if it sits in the refrigerator longer.
Step 3
Roll out the chilled dough into a circle with a diameter of 35-40 cm on a floured surface. Transfer to a baking sheet lined with parchment paper.
Step 4
Arrange the sliced tomatoes on the dough, leaving a 2 cm border from the edges.
Step 5
In a bowl, mix olive oil, thyme, grated garlic, salt, and pepper.
Step 6
Evenly distribute the oil and thyme mixture over the tomatoes.
Step 7
Fold the edges of the dough up and pinch them together randomly.
Step 8
Bake the galette in the oven at 200°C (392°F) for 20 minutes.
Step 9
After 20 minutes, scatter pieces of mozzarella over the tomatoes, add fresh thyme sprigs on top (if available), and return to the oven for another 5 minutes.
Step 10
*(If baking with feta or goat cheese, you can place the cheeses directly on the tomatoes and bake everything together.) If the center of the galette puffs up during baking, make a couple of piercings with a fork, and everything will settle back down.
