Step by Step guide

Step 1

Grind the flaxseed in a coffee grinder or blender. Mix with a cup of warm water. Let it steep for 20 minutes.

Step 2

Sift the flour, add the water with flaxseed, oil, salt, and pepper, and whisk until lumps disappear. Adjust the liquid in the batter with the amount of water to your taste.

Bake golden pancakes.

Do not make the pancakes too thin - otherwise, they will not be able to hold the filling. When baking, these pancakes shrink slightly in diameter - becoming 1 cm smaller than the diameter of your pan.

Wash the vegetables, cut them into convenient pieces, slice the onion into half rings, and finely chop the garlic.

In a baking dish with high sides, place all the vegetables, drizzle with olive oil, season with salt and pepper, and mix.

Bake, stirring a couple of times and checking, for 15-20 minutes at 356°F.

When you determine that the vegetables are ready, take them out of the oven without turning it off.

Place filling and herbs in each pancake. If you want to add cheese, mix the mozzarella and parmesan (grated) in equal parts and place on top of the filling in the pancake.

Carefully arrange the filled pancakes on a baking sheet, pressing them tightly together.

Put in the oven for 5-7 minutes. Watch to ensure that the cheese or juices do not start to leak out of the pancake.
