- Meyer Lemon Juice - 1 fl oz
- Oranges - 3 pieces
- Non-alcoholic sparkling wine - 3 fl oz
- Cookie - to taste
Step by Step guide
Step 1
Whisk the egg yolks in a double boiler with sugar until they triple in volume, the mixture becomes thick, begins to flow from the whisk in a heavy, glossy droplet, and all foam and bubbles have disappeared.
Step 2
In the thickened mixture of egg yolks and sugar, whisk in vermouth or sparkling wine, along with orange or lemon juice.
Step 3
Transfer the dish to a serving plate.
Step 4
Garnish the mixture with citrus wedges or ladyfinger cookies, and serve with a dessert spoon.
