Sacher Cake
Ingredients
- Sugar - 6.7 oz
- Butter - 5.6 oz
- Wheat Flour - 4.2 oz
- Milk - 4 fl oz
- Cream - 3 fl oz
- Farm fresh eggs - 6 pieces
- Powdered Sugar - 1.4 oz
- Apricot Jam - 1 jar
- Liquid dark chocolate - 17.6 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Beat 120 g of softened butter and powdered sugar for 2–3 minutes. Add the egg yolks one at a time, continuing to beat.
Step 2
Whip the egg whites until stiff, add 160 g of sugar, and beat for 2–3 minutes. Mix the yolk mixture with 120 g of melted chocolate. Add the egg whites and sifted flour.
Step 3
Pour the batter into a greased and floured baking pan. Bake for 35 minutes, remove from the pan, and let cool.
Step 4
For the glaze, mix milk, cream, 30 g of sugar, and 60 ml of water. Bring to a boil while whisking. Once it starts to boil, remove from heat.
Step 5
Add 380 g of chopped chocolate and 40 g of butter. Stir and let cool.
Step 6
Place the jar of jam in a pot of water and warm it slightly. Cut the sponge cake into 2 layers. Spread warm jam on top.
Step 7
Transfer the cake to a rack and place a wide plate underneath. Cover the cake with the glaze. Place in the refrigerator for a few minutes.
