Description
Buns shaped like coffee beans. Saffron and cumin, which are added to the dough, are attributes of Eastern cuisine. We especially enjoy these buns when spread with hummus. However, they also pair excellently with classic European fillings like smoked salmon and cream cheese. Saffron gives the dough a light aroma, but it is mainly used for color; this golden, sunny pastry brightens even the gloomiest days.
Ingredients
- Wheat Flour - 17.6 oz
- Salt - to taste
- Water - 12 fl oz
- Saffron - a pinch
- Toasted Cumin Seeds - a pinch
- Dry yeast - 0.4 oz
Step by Step guide
Step 1
Soak the saffron in water and let it steep.
Step 2
Rub the yeast into the flour until it forms a uniform crumb. Add salt, then the saffron water. Knead the dough for 2 to 3 minutes until it starts to come together into a ball. Leave it to rise for 1 hour.
Step 3
Cover the dough with a towel and sprinkle with flour. Shape the dough into a rectangle with your palm. Fold one third of the rectangle to the center and press with your fingertips; then cover with the remaining third. Cut the dough into 10 pieces and form them into balls. Dust each with flour, sprinkle your hand with flour, and press firmly in the center of each ball. The buns should resemble coffee beans.
Step 4
Place the buns on a towel-lined baking sheet, cover, and let rise for 45 minutes.
Step 5
Sprinkle the buns with cumin seeds.
Step 6
Preheat the oven to 482°F. Then reduce the heat to 428°F and spray water on the oven walls.
Step 7
Bake for 12 minutes.
