Description
This recipe was shared with us by Sarah Johnson, co-founder of a popular American restaurant and a culinary company. Sakura is not only a beautiful tree, symbolizing spring and one of Japan's visual codes, but it is also a valuable culinary product. Here, you have a lovely way to use candied sakura flowers in baking (they can be found in specialized Asian grocery stores). In this pancake cake, sakura plays several roles: it adds spice and fruity sweetness to the batter, while imparting an unmatched aroma to the cream.
Ingredients
- Milk - 17 fl oz
- Cherry - 1.2 oz
- Wheat Flour - 5.6 oz
- Sugar - 2.1 oz
- Butter - 1.1 oz
- Salt - 0.1 oz
- Chicken Egg - 4 pieces
- Vanilla extract - 1 tablespoon
- 33% Cream - 3 fl oz
- Semi-soft cream cheese - 17.6 oz
- Powdered Sugar - 2.5 oz
Step by Step guide
Step 1
Soak the sakura in cold water for 2–3 hours, then rinse.
Step 2
Mix the eggs and sugar in a mixer until the sugar is fully dissolved; there's no need to whip it into a fluffy foam.
Step 3
Add milk and vanilla extract, and mix well.
Step 4
Gradually add the sifted flour and mix until smooth and well combined.
Step 5
Slowly drizzle in the melted butter. Mix well.
Step 6
Chop 20 grams of cherry blossoms and fold them into the dough.
Step 7
Preheat a crepe pan, grease it with butter, and pour in a small amount of batter. You can pour the excess batter back into the bowl so that the crepes turn out as thin as possible. Cook for 20 seconds on one side, then remove the crepe. Since they are thin, they do not need to be cooked on both sides.
Step 8
The finished pancakes must be allowed to cool, otherwise they will spoil the cream.
Step 9
Whip the cream until soft peaks form.
Step 10
Add cream cheese and powdered sugar to the cream. Mix well.
Step 11
At the end, fold the remaining chopped sakura into the cream.
Step 12
Assemble the cake by spreading a thin layer of cream on each pancake. There is no need to spread cream on the edges of the pancakes. For the top pancake, spread a thick layer of cream and decorate to your liking.
