Salted Meat Pancakes

Ingredients

  • Butter - 1.8 oz
  • Onion - 1 piece
  • Garlic - 2 cloves
  • Salted crackers - 13.2 oz
  • Breadcrumbs - 3.5 oz
  • Chicken Egg - 1 piece
  • Wheat Flour - 1.8 oz
  • Olive Oil - to taste
  • Ocean salt - to taste
  • Quail Egg - to taste
  • Ground Black Pepper - to taste
  • Salad Potatoes - 2 lbs
  • Salt - to taste

Step by Step guide

Step 1

Peel the potatoes and grate them on a coarse grater. Lightly salt and let sit for 5–10 minutes. Meanwhile, heat the butter in a pan until it foams. Add the onion and garlic, season with salt, and cook for 4–5 minutes until the mixture turns golden brown. Remove the pan from heat.

Step 2

Squeeze the moisture from the potatoes (place them in a cloth and twist tightly), then transfer to a bowl. Mix by hand with the salted meat, the softened onion and garlic, brown sauce, and beaten egg. Add enough breadcrumbs so that the mixture holds together. Season well with salt and pepper.

Step 3

Divide the salted meat mixture into 8 equal parts. Shape them into pancakes and dust with flour. For clean edges, you can use baking molds (with a diameter of 8–10 cm). Refrigerate for at least 4 hours, preferably overnight.

Preheat the oven to 374°F.

Step 5

Drizzle the bottom of a large non-stick skillet with olive oil and place over high heat. When the oil is hot, add the salted meat pancakes and fry for 4 minutes on each side until golden and crispy. Transfer the pancakes to a baking dish and place in the oven for 10–15 minutes, flipping them halfway through. Meanwhile, in the remaining olive oil, fry as many duck eggs as you like. Serve the pancakes hot, topped with the fried duck eggs.
