Sandy with wine sauce and mandarins

Ingredients

  • Red Grape Juice - 4 fl oz
  • Orange zest - 1 fl oz
  • Mandarins - 2 pieces
  • Lime Juice - 0 fl oz
  • Vanilla Ice Cream - 24 fl oz

Step by Step guide

Step 1

Peel the mandarins, removing the skin and membranes, to leave clean segments.

Step 2

In a saucepan, bring the red wine to a boil and cook until the volume reduces to 30 ml, about 6–8 minutes.

Step 3

Add the marmalade and cook until slightly thickened, 1–2 minutes. Remove from heat and add the mandarin segments and lime juice.

Step 4

Scoop the ice cream into dessert bowls and drizzle with the sauce.
