Ingredients
- Sugar - 3.5 oz
- Chicken Egg - 3 pieces
- Wheat Flour - 3.2 oz
- Powdered Sugar - 1.1 oz
- Butter - 0.7 oz
- Salt - a pinch
Step by Step guide
Step 1
Beat the egg yolks with 80 grams of sugar. Gradually add about 70-80 grams of flour to the mixture, one teaspoon at a time. In a separate bowl, whip the egg whites until stiff peaks form. Add the egg whites to the yolk mixture one tablespoon at a time, and mix thoroughly.
Step 2
Preheat the oven to 302°F. Grease a baking tray with butter and lightly dust it with flour. Using a pastry bag, pipe the ladyfinger sticks onto the tray. Each stick should be about 10 cm long. The diameter of the piping bag should be approximately 1.5 cm.
Step 3
Mix the powdered sugar with 20 grams of granulated sugar. Sprinkle half of this mixture over the cookies. Once the sugar dissolves on the hot cookies, sprinkle the remaining powdered sugar and granulated sugar on top. Let the cookies sit for 2-3 minutes, then place them in the oven to bake.
Step 4
The ladyfingers are ready when they develop a golden crust. Remove the cookies from the baking sheet and let them cool. It’s possible that the sponge ladyfingers may not be dry enough for tiramisu; in that case, we recommend lightly drying them in a warm oven or simply leaving them covered with a napkin or clean towel at room temperature overnight.
