- Radish - 0.4 oz
- Spinach - 0.1 oz
- Mashed Potatoes - 17.6 oz
- Chicken Broth - 3 fl oz
- Cream - 1.8 oz
- Spinach - 5.3 oz
- Beetroot - 0.7 oz
- 20% Sour Cream - 5.3 oz
- Dijon Mustard - 1.1 oz
- Vegetable Oil - 1 fl oz
Step by Step guide
Step 1
For the parmentier, mix the mashed potatoes, chicken broth, cream, and spinach paste. Heat, then add salt and pepper to taste.
Step 2
For the beet sauce: blend roasted beetroot, sour cream, Dijon mustard, vegetable oil, salt, and pepper until smooth.
Step 3
In a large deep plate, place the hot spinach parmentier, top with 3 rolls of marinated salmon, two halves of poached egg, and garnish with beet sauce, dried tomatoes, spinach, and radish.
