Scandinavian rhubarb pudding with whipped cream
Ingredients
- Rhubarb - 24 oz
- Water - 12 fl oz
- Sugar - 5.3 oz
- Vanilla salt - 1½ teaspoons
- Corn Starch - 3 tablespoons
- 33% Cream - 8 fl oz
Step by Step guide
Step 1
In a small bowl, mix the cornstarch with a little water to form a paste. Add it to the rhubarb and cook for another 5 minutes until the mixture thickens slightly. Pour the mixture into a glass serving bowl and chill.
Step 2
Before serving, whip the cream with the remaining sugar and vanilla until stiff peaks form. Transfer to a piping bag and decorate the top of the pudding.
Step 3
Cut the rhubarb into small pieces and place it in a saucepan. Add water and 100 g of sugar. Cook over medium heat until soft. Add 0.5 teaspoons of vanilla.
