- Butter - 5 oz
- Glutinous Rice Flour - 0 oz
- Wheat Flour - 5 oz
- Brown Sugar - 5 oz
- Sugar - 0 oz
- Ocean salt - a pinch
Step by Step guide

Prepare all the ingredients.
Step 2
Add the softened butter to the brown sugar.
Step 3
First, gently mix the granulated sugar into the butter using a whisk.
Step 4
Then, beat with a mixer until a homogeneous fluffy mass forms, for about 1–2 minutes, but no more. It is important not to overbeat the butter.
Step 5
Sift the rice flour into the butter mixture. If you don't have ready-made flour, you can make it yourself by grinding rice in a coffee grinder.
Step 6
Carefully fold the rice flour into the mixture with a spatula. Sift the wheat flour beforehand and add the salt to it. Introduce the flour into the dough gradually, as the gluten content may vary. The dough should be soft but not overly floury.
Step 7
Place the dough in a baking dish. Line the bottom of the dish with parchment paper; no additional greasing is needed.
Step 8
Even out the dough across the entire diameter. It may stick and stretch, so you can sprinkle a little flour on it. Prick the entire dough with a fork and immediately cut it into 8 pieces.
Step 9
Bake in an oven preheated to 320°F for about 25–30 minutes, until the dough is golden brown.
Step 10
Sprinkle the finished cookies with sugar. They can be served hot or cold.
