Scrambled Eggs with Bacon and Vegetables
Ingredients
- Chicken Egg - 2 pieces
- Potato - 1 piece
- Ramiro Pepper - ½ piece
- Onion - ½ piece
- Garlic - 2 cloves
- Bacon - 2.5 oz
- Parsley - ½ bunch
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Slice the onion into half rings or quarter rings.
Step 2
Chop the garlic coarsely.
Step 3
Chop the Ramiro pepper into small slices.
Step 4
Dice the tomato.
Step 5
Cut the bacon into small cubes and place it in a dry, hot skillet.
Step 6
Fry over high heat until golden brown and transfer to a separate plate.
Step 7
Add the Ramiro pepper to the rendered bacon fat.
Step 8
After 3 minutes, add the tomato and onion, stir. Reduce the heat to medium.
Step 9
After a couple of minutes, add the garlic and stir.
Step 10
After 2–3 minutes, crack in the eggs.

Add salt.

Season with black pepper.

Cover with a lid and reduce the heat a little more.
Step 14
As soon as the egg whites set, transfer to a plate.
Step 15
Sprinkle with parsley and the fried bacon on top.
