Ingredients
- Chicken Egg - 2 pieces
- Pickled Chanterelles - 1.8 oz
- Butter - 0.7 oz
- Olive Oil - 1 teaspoon
- Arugula - 0.2 oz
- Ground Black Pepper - to taste
- Chili Flakes - to taste
- Mayonnaise - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
Cut the mushrooms into medium-sized pieces.
Step 2
Separate the egg whites from the yolks.
Step 3
Add salt.
Step 4
Mix the yolk and the egg white separately.
Step 5
Heat both types of oil in a frying pan.
Step 6
Add the mushrooms, season with salt, and sauté over medium heat for about 5 minutes, stirring occasionally.

Add the egg whites to the pan on both sides.

Add the yolks on the other two sides.

Season with pepper and cook for another 3 minutes.
