Scrambled quail eggs with avocado and mozzarella
Ingredients
- Melted Cheese - 4.4 oz
- Quail Egg - 10 pieces
- Cherry Tomato Confit - 7.1 oz
- Avocado - 1 piece
- Dijon Mustard - 2 spoons
- White Balsamic Cream - 1 tablespoon
- Sesame bun - ½ spoons
- Flaky sea salt - a pinch
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Slice the mozzarella into pieces about 8 mm thick.
Step 3
Slice the avocado into pieces about 1 cm thick.
Step 4
Crack the quail eggs into a cup.
Step 5
Whisk with a whisk or fork.
Step 6
Drizzle the avocado with lemon juice.
Step 7
Heat a skillet with oil and a pinch of coarse salt.
Step 8
Season the avocado with salt.
Step 9
Season the mozzarella with pepper.

Pour the eggs into the skillet.

Immediately push the egg mixture toward the center from both opposite sides for one minute.

Transfer to a plate.

Further narrow the width of the scramble towards the center. Then, alternate layering the mozzarella and avocado.

Spread grainy mustard over the slices of avocado.

Drizzle with balsamic sauce.

Place a sprig of cherry tomatoes onto a hot skillet. Lower the heat to medium and remove the tomatoes after 3 minutes.

Sprinkle with sesame seeds. Serve with a mild espresso or a glass of sparkling wine. You can add a couple of thin slices of semi-hard cheese with higher acidity.
