Description
At the end of July, sea buckthorn will start appearing in some regions, along with a delightful cottage cheese tart that can also be made with frozen berries. This recipe comes from a corner of a popular American restaurant, led by Chef John Smith.
Ingredients
- Crackers - 5.3 oz
- Butter - 6 oz
- Semi-soft cream cheese - 17.6 oz
- 33% Cream - 3 fl oz
- Chicken Egg - 2 pieces
- Sugar - 5.3 oz
- Lemon - 1 piece
- Sea Buckthorn - 12.3 oz
- Starch film - 0.7 oz
Step by Step guide
Step 1
Crush the crackers.
Step 2
Mix the crackers with 120 grams of butter.
Step 3
Spread the mixture of butter and crackers into the baking dish.
Step 4
Flatten and press down firmly.
Step 5
Prepare the cheese filling: blend 500 grams of smooth cottage cheese, 100 ml of 33% cream, 2 eggs, 150 grams of sugar, the juice and zest of 1 lemon, and 50 grams of butter in a blender until smooth.
Step 6
Pour the cheese mixture over the cracker base.
Step 7
Top with sea buckthorn berries.
Step 8
Dust with cornstarch.
Step 9
Bake for 80 minutes in a preheated oven at 302°F, ideally on the convection setting.
