Sea Buckthorn Mousse
Ingredients
- Sea Buckthorn - 17.6 oz
- Water - 27 fl oz
- Sugar - 7.1 oz
- Gelatin - 1.1 oz
Step by Step guide
Step 1
Rinse the sea buckthorn and drain in a colander. Allow the water to drain, transfer the berries to a container and blend with a blender.
Step 2
Pour 400 ml of water into the blended berries and strain the puree through a sieve.
Step 3
Place the remaining pulp in the sieve into a pot, add the remaining water, and put it on the heat.
Step 4
Bring the mixture to a boil, strain it, and add sugar and gelatin, previously soaked in a small amount of cold water.
Step 5
Return the mixture with gelatin to the heat and, stirring, bring to a boil.
Step 6
Cool and mix with the previously strained sea buckthorn puree.
Step 7
Place the container with the mixture in a bowl filled with ice or ice water, and whip on medium speed until a fluffy thick mass forms, about 2–3 minutes.
Step 8
Divide the mousse into molds and refrigerate for a few hours.
