Sea Buckthorn Parfait

Ingredients

  • Butter - 7.8 oz
  • Sugar - 8.8 oz
  • Whole egg - 5.6 oz
  • Salt - a pinch
  • Wheat Flour - 10.6 oz
  • Almond - 1.1 oz
  • Baking Powder - 0.1 oz
  • 33% Cream - 8 fl oz
  • Water - 1 fl oz
  • Gelatin - 0.5 oz
  • Sea Buckthorn - 0 fl oz
  • Sea Buckthorn - to taste

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Mix softened butter with 130 grams of sugar using a mixer.

Step 3

Add 90 grams of egg yolks and a pinch of salt, and mix again.

Step 4

Add wheat flour, almond flour, and baking powder, knead the dough, and refrigerate for 2 hours.

Step 5

After 2 hours, roll out the dough to a thickness of 7 mm and cut out circles with a diameter of 10 cm.

Step 6

Bake in an oven preheated to 338°F for 5–7 minutes.

Step 7

Soak the gelatin.

Step 8

Whip the cream and refrigerate.

Step 9

Whip 70 grams of egg yolks and set aside.

Step 10

In a saucepan, mix 120 grams of sugar and water, bring to 250°F, and remove from heat.

Step 11

Add the whipped yolks, squeezed gelatin, and sea buckthorn juice to the hot syrup. Mix and let cool.

Step 12

Add the whipped cream and gently fold with a spatula.

Step 13

When the mousse thickens, transfer it to a pastry bag.

Step 14

Pipe the mousse onto the dough circles and refrigerate the parfait for at least 30 minutes, but preferably for 2 hours.

Step 15

Serve the parfait garnished with fresh sea buckthorn berries.
