Semolina Cake with Dates
Ingredients
- Semolina - 17.6 oz
- Wheat Flour - 4.4 oz
- Baking Powder - 1 teaspoon
- Sugar - 4 tablespoons
- Vanilla Sugar - 0.4 oz
- Butter - 7.1 oz
- Chicken Egg - 1 piece
- Pitted Dates - 7.1 oz
- Honey - 2 tablespoons
- Lemon - ½ piece
- Ground Cinnamon - 2 teaspoons
- Walnuts - 2.1 oz
- Water - 4 fl oz
Step by Step guide
Step 1
Finely chop the dates, place them in a saucepan, cover with water, and boil for 5 minutes.
Step 2
Add honey, juice of half a lemon, cinnamon, and walnuts. Mix and remove from heat.
Step 3
Combine semolina with flour, sugar, vanilla sugar, and baking powder.
Step 4
Add the egg and melted butter, mix. This will create a crumbly mixture.
Step 5
Spread half of the crumb mixture into a greased baking dish (I used a rectangular one measuring 30 cm x 22 cm), and press down.
Step 6
Spread the filling evenly on top.
Step 7
Top with the second half of the semolina crumb mixture.
Step 8
Bake at 180°C for about 40 minutes.
