Description
In this recipe, you can also use oranges — it will be very delicious as well. You can use any berries (fresh or frozen), just a handful is needed. This is a very simple cake to prepare, requiring no complicated manipulations, yet it always looks impressive and is very tasty. It can be served with ice cream, cream, or simply with tea.
Ingredients
- Semolina - 14.1 oz
- Milk - 10 fl oz
- Farm fresh eggs - 3 pieces
- Sugar - 3.5 oz
- Mandarins - 6 pieces
- Red Currant - 3 tablespoons
Step by Step guide

Prepare the necessary ingredients.
Step 2
Pour the semolina into a bowl.
Step 3
Pour warm milk over the semolina.
Step 4
Crack the eggs into the milk and semolina mixture.

Mix well, set aside 1 tablespoon of sugar for sprinkling, and add the remaining sugar to the mixture.

Stir everything together and let it sit for 15–20 minutes for the semolina to swell — it will become a liquid batter.

Peel the mandarins.

Cut the mandarins in half crosswise.

Line a baking dish with parchment paper or a silicone mat, then place the mandarins cut side down.

Sprinkle with berries.

Sprinkle sugar on top (you will need just about 1 tablespoon).

Pour the swollen liquid batter over the mandarins.

Bake in the oven at 356°F for 40 minutes.

Check for readiness with a toothpick (it should come out dry after piercing the cake).

Next, cover the cake with a plate and flip it over.
