Semolina Cake with Pineapples

Ingredients

  • Sugar - 4.4 oz
  • Chocolate eggs - 3 pieces
  • Canned Pineapple Chunks - 1 can
  • Semolina - 2.6 oz
  • 10% cream - 17 fl oz
  • Walnuts - 10 pieces

Step by Step guide

Step 1

Separate the egg whites from the yolks. Whisk the yolks with sugar until well combined. Mix two tablespoons of pineapple juice with semolina and combine with the yolks. Gently fold in the whipped egg whites. Pour the mixture into a well-greased baking pan. (I line the pan with parchment paper for easier removal). Bake in the oven for 40 minutes at 180°C.

Step 2

Whip the cream with sugar (about 2 tablespoons) until thick. Cut the cake in half after it has cooled, spread a layer of whipped cream on one half, then a layer of pineapples. Cover with the top half of the cake, spread cream around the edges and on top. Decorate with pineapples and walnuts. (Or with grated chocolate: it pairs very well with the cream).
