Semolina Pie with Apples
Ingredients
- Sugar - 1 cup
- Semolina - 1 cup
- Honey - 2 tablespoons
- Apple - 2 lbs
- Cinnamon - to taste
- 20% Sour Cream - 5.3 oz
- Butter - 3.5 oz
- Baking Powder - 2 teaspoons
- Wheat Flour - 1 cup
Step by Step guide
Step 1
Wash the apples; peel and core them. Grate on a coarse grater. Add honey and cinnamon; mix well (you can sprinkle with lemon juice or strong hibiscus tea to prevent the apples from browning).
Step 2
Mix the flour, sugar, semolina, and baking powder.
Step 3
In a greased baking dish, layer: dry 'dough'/apples/'dough'/apples/.../'dough'. Layers about a finger to one and a half fingers thick are the most successful, in my opinion. Finish with a dry layer.
Step 4
Sprinkle grated butter on top.
Step 5
Bake at 180–392°F for about an hour.
Step 6
Brush the finished pie with thick sour cream and bake for another 15–20 minutes until a golden crust forms (I flip the pie for this — it results in a crispy buttery crust on the bottom and a tender sour cream 'glaze' on top).
