Ingredients
- Sugar - 6.3 oz
- Honey - 4 tablespoons
- Sesame Seeds - 4.2 oz
- Peeled almonds - 3.5 oz
- Butter - 0.9 oz
- Candied Ginger - 2.1 oz
- Baking Soda - 1 teaspoon
Step by Step guide
Step 1
Line a baking sheet with parchment paper. In a saucepan, combine sugar, honey, and 80 ml of water, heating gently without stirring until the sugar dissolves. Increase the heat to high and add the sesame seeds and almonds. Cook, stirring almost constantly, until the mixture begins to bubble and then caramelize and darken. Continue stirring until the seeds and sugar reach a rich caramel color, then remove from heat.
Step 2
Stir in the butter, and when it melts and fully combines with the mixture, add the chopped candied ginger, followed by the baking soda. At this point, the mixture will start to foam slightly.
Step 3
Pour the mixture onto the baking sheet and spread it out with the back of a spoon to a height of about 2 cm. It should form a rectangle approximately 20×28 cm. Allow the mixture to cool completely.
Step 4
Flip the brittle onto a cutting board and cut into squares. Store in an airtight container. The dessert keeps for a long time but may become slightly sticky over time.
