Step by Step guide
Step 1
Preheat the oven to 356°F. Soak a slice of bread in coconut milk for ten minutes.
Step 2
Chop the onion and garlic, and sauté them in one tablespoon of olive oil for three minutes. In a separate pan, sauté the broccoli florets and diced bell pepper in another tablespoon of oil for three minutes as well. Without peeling, dice the sweet potato, cover it with water, and cook until tender. Drain and mash it into a puree.
Step 3
Mix four and a half tablespoons of tomato paste, ground meat, 100 grams of onion-garlic sauté, and the same amount of broccoli with peppers. Add peas, egg whites, Worcestershire sauce, dry mustard, ground chili, and soaked bread. Season with salt and pepper. Spoon three tablespoons of the mixture into seven muffin cups and bake in the oven for ten minutes.
Step 4
Meanwhile, you can prepare the glaze: mix the leftover tomato paste, pickled peppers, honey, chicken broth, lime juice, and a quarter teaspoon of salt. Drizzle the glaze over the meatballs and return them to the oven for twenty minutes.
Step 5
Mash the cooked meatballs and mix them with broccoli and bell peppers, finely chopped fresh chili, and two tablespoons of minced chipotle pepper. Season with salt and black pepper. Transfer the mixture to a round baking dish.
Step 6
In a separate bowl, mix the sweet potato puree with a bit of sautéed onions and garlic, add butter, season with salt and pepper, stir well, and place it back into the same dish. Bake at 392°F for twenty minutes, or until a crust forms. Once the pie is ready, sprinkle with chopped green onions.
