Shortbread cookies with passion fruit cream
Ingredients
- Passion Fruit - 2 pieces
- Strawberry - 2 pieces
- Mint - 0.1 oz
- Passion Fruit - 3 fl oz
- Mascarpone Cheese Unagrande - 8.8 oz
- Butter - 1.8 oz
- Wheat Flour - 3.2 oz
- Quail Egg - 1 piece
- Gelatin - 0.2 oz
- Powdered Sugar - 1.4 oz
Step by Step guide
Step 1
Knead together 80 g of flour, butter, quail egg, 0.5 of the powdered sugar, and a pinch of salt, wrap in plastic wrap, and refrigerate for 15 minutes.
Step 2
Soak the gelatin in cold water for 5 minutes; open the mascarpone container and let it reach room temperature.
Step 3
Cut the passion fruits in half and scoop out the pulp with a spoon.
Step 4
Heat the syrup, add the gelatin, and stir until fully dissolved without bringing the syrup to a boil; cool the syrup to room temperature; mix the mascarpone with the syrup and the remaining powdered sugar.
Step 5
Roll out the dough on parchment paper, previously dusting it with the remaining flour; sprinkle flour on top of the dough to prevent it from sticking to the rolling pin while rolling; the thickness of the dough should be 4 mm.
Step 6
Prick the dough evenly with a fork across the entire surface and bake in a preheated oven at 392°F for 7 minutes; cool the cookies and break them into small pieces.
Step 7
Layer the cream in a glass, sprinkle with broken cookies, top with the remaining cream, and place in the freezer for 15 minutes; add the passion fruit and strawberries, garnish with mint, and serve.
