Ingredients
- Wheat Flour - 8.8 oz
- Butter - 4.2 oz
- Sugar - 3.2 oz
- Whole egg - 2 pieces
- Sour Cream - 7.4 oz
- Chicken Egg - 2 pieces
- Vanilla salt - 0.5 oz
- Potato protein - 0.7 oz
- Fresh Berries - 5.8 oz
Step by Step guide
Step 1
Sift the flour with salt into a mound on the table or in a food processor bowl. Add sugar. Place diced cold butter on top. Chop the flour with the butter until it resembles fine crumbs. Add the yolks one at a time, mixing the dough each time (instead of yolks, you can add a whole egg or cold water). Add 1 tablespoon of sour cream. Gather the finished dough into a ball, wrap it in plastic wrap, and refrigerate for 1 hour. You can also place it in the freezer for 15–20 minutes. If it gets too cold, let it sit at room temperature for a bit.
Step 2
Remove the dough from the refrigerator, roll it out slightly, and line the bottom and sides of the pie dish, forming the edges.
Step 3
Line the dough with a circle of parchment paper and place dry beans (or peas, to prevent the dough from rising) on top. Place the dish with the dough in a preheated oven at 190–392°F and bake for 10–12 minutes.
Step 4
Rinse the berries (you can use fresh-frozen berries).
Step 5
In a bowl, combine the eggs, sour cream, sugar, vanilla sugar, and add the starch, mixing well with a whisk until smooth.
Step 6
Pour the berries into the prepared crust (if they are sour, you can sprinkle half of them with sugar). Pour the sour cream and egg mixture over the pie. Bake in the oven for 15–20 minutes at 392°F.
