Ingredients

  • Wheat Flour - 6.2 oz
  • Salt - a pinch
  • Butter - 2.6 oz
  • Chicken Egg - 1 piece
  • Hard Cheese - 2.6 oz
  • Smoked haddock fillet - 8.8 oz
  • Orange Bell Peppers - 2 pieces
  • Chopped Green Onions - 4 tablespoons
  • 20% Sour Cream - 3.5 oz
  • Ground Black Pepper - to taste
  • Onion - 1 head

Step by Step guide

Step 1

Boil the salmon fillet and break it into pieces, removing the bones.

Step 2

Preheat the oven to 428°F.

Step 3

Sift the flour and a pinch of salt. Chop the room temperature butter into the flour and rub it with your hands until crumbly. Add grated cheese and the whisked egg. Mix thoroughly and knead the dough. Form into a ball, wrap in plastic, and refrigerate for at least 30 minutes.

Step 4

In a skillet, sauté a small onion until translucent, then add diced bell pepper. When the pepper becomes soft, mix everything with the salmon pieces, dill, and sour cream, and season with salt and pepper.

Step 5

On a floured surface, roll out the dough thinly and cut out circles about 10 cm in diameter using a large cup. Place a little filling in the center of each circle, fold in half, and pinch the edges. The pastries resemble Italian calzones.

Step 6

Place the pastries on a greased baking sheet. The dough scraps can be re-rolled for additional pastries. Brush the pastries with either egg yolk or milk and sprinkle with the remaining cheese.

Step 7

Bake for 20–25 minutes until golden brown.
