Description
Shortcrust Pastry Pie with Chanterelles
Ingredients
- Wheat Flour - 7.1 oz
- Butter - 3.5 oz
- Whole egg - 2 pieces
- Pickled Chanterelles - 8.8 oz
- Aged gouda cheese - 7.1 oz
- Sour Cream - 3.5 oz
- Onion - 2 heads
- Cream - 3.5 oz
- Potato protein - 1 tablespoon
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Chop the flour with the butter and knead in 2 egg yolks. The dough should be pliable and not stick to your hands. You can achieve the desired consistency by adding cold water. Place the finished dough in the refrigerator for half an hour, then roll it out into a tart pan and bake under a weight for about 15 minutes at 392°F, then cool.
Step 2
Boil the chanterelles for about 5 minutes. Drain in a colander. Let them dry.
Step 3
Grate the Gouda cheese on a coarse grater. Finely chop the onions. Mix half of the cheese with the onions and starch.
Step 4
Beat one egg with the cream (100 grams) and sour cream (also 100 grams), season with salt and pepper, and mix in the remaining grated cheese.
Step 5
Next, spread the onion and cheese mixture over the baked base, then top with the mushrooms. Pour the sauce made from cheese, cream, and sour cream over it.
Step 6
Bake for 40–50 minutes at 150–320°F.
Step 7
Cool and serve.
