Description
I'll share how I mix the dough. When something good happens, you rub your hands together joyfully, right? That's how I mix shortcrust pastry!!!
Ingredients
- Butter - 7.1 oz
- Sugar - 2 tablespoons
- Salt - to taste
- 10% cream - 5 fl oz
- Chicken Egg - 1 piece
- Wheat Flour - 14.1 oz
- Powdered Sugar - 2 tablespoons
- Frozen Raspberries - 10.6 oz
- Orange zest - 1 piece
Step by Step guide
Step 1
Grate the frozen butter into the sifted flour and mix the dough.
Step 2
Add the beaten egg, salt, and sugar. And that's it, you get an elastic ball of dough. Let it rest for 20 minutes.
Step 3
In the meantime, we will prepare the baking pan and some beans (if you don't have ceramic baking balls for shortcrust pastry).
Step 4
Spread the dough in a greased and floured pan, no thicker than 8 mm, thicker may not bake through, fill with beans and place in a preheated oven at 392°F for 20 minutes.
Step 5
Meanwhile, prepare the filling. For this, whisk together the liquid ingredients and zest, mix in the flour and powdered sugar, pour the filling into the shortcrust base, sprinkle the thawed blueberries on top, add sugar to taste, and return to the oven for another 15-20 minutes.
