Description
I only use frozen berries, as they do not get squished when mixing the batter. You can use various berries: blueberries, bilberries, cranberries... Nuts and raisins also work well. The amount of sugar can be reduced to 100 grams for those who prefer less sugar in baked goods.

- Wheat Flour - 8.8 oz
- Sugar - 7.1 oz
- Baking Powder - 2 teaspoons
- Vanilla salt - 1 teaspoon
- Chicken Egg - 1 piece
- Milk - 6 fl oz
- Vegetable Oil - 3 fl oz
- Salt - a pinch
- Lingonberry - 2 cups
Step by Step guide
Step 1
Preheat the oven to maximum.
Step 2
Mix all the dry ingredients: flour, baking powder, salt, sugar.
Step 3
In another bowl, mix all the liquid ingredients: milk, egg, vegetable oil.
Step 4
Pour the liquid mixture into the dry ingredients, stirring slowly. The batter should be lumpy.
Step 5
Add the lingonberries (fresh or frozen) to the batter, mixing carefully to avoid crushing the berries.
Step 6
Grease the muffin tins with a little vegetable oil.
Step 7
Divide the batter among the muffin tins, filling them two-thirds full.
Step 8
Place the muffin tins in the oven preheated to 482°F, then reduce the temperature to 428°F after 3–5 minutes.
Step 9
Bake for 25–30 minutes.
