You can replace the strawberry sauce with any other dessert sauce if desired. It's delicious either way :)
Ingredients
- Wheat Flour - 2.5 oz
- Sugar - 5.3 oz
- Butter - 2.5 oz
- Glucose Powder - 2.5 oz
- Ricotta cheese - 8.8 oz
- Mascarpone Cheese Unagrande - 3.5 oz
- Ground Almonds - 1.8 oz
- Farm fresh eggs - 3 pieces
- Strawberry - 8.8 oz
- Powdered Sugar - ¾ cup
Step by Step guide
Step 1
In a bowl, mix all the ingredients for the dough (flour - 70 grams; sugar - 150 grams; butter - 70 grams; glucose syrup or honey - 70 grams). Distribute the resulting dough into small molds with a wide bottom (or spoon it onto a baking sheet lined with parchment paper and flatten into circles). Bake at 338°F until golden brown. Then remove and immediately roll the circles into tubes.
Step 2
In a bowl, mix all the ingredients for the filling (ricotta cheese - 250 grams; mascarpone cheese - 100 grams; sugar - 80 grams; ground almonds - 50 grams; eggs - 3 pieces). Fill the prepared tubes with this mixture.
Step 3
Mix the strawberries with powdered sugar and cook over low heat, stirring frequently, until a syrup forms.
Step 4
Place the cannoli on a plate, drizzle with strawberry sauce, and serve.
