Description
Baklava is a famous Eastern sweet, with a history that, according to one version, dates back to Greece as far as the 2nd century BC. In any case, the earliest records of the ancient Roman pastry placenta, made from layers of dough, honey, and nuts, are attributed to this period. Nowadays, we often consider Turkey to be the birthplace of baklava, which is not surprising: the country boasts over a hundred varieties of this dessert. The filling and preparation methods can vary by region, but the essence remains the same: layers of dough rolled out to a paper-thin consistency, soaked in honey, with a textured filling hidden in between.
Ingredients
- Whole egg - 6 pieces
- Sugar - 21.9 oz
- Sour Cream - 7.1 oz
- Activated Baking Soda - 1 tablespoon
- Butter - 10.6 oz
- Wheat Flour - 21.2 oz
- Egg white - 5 pieces
- Walnuts - 24.7 oz
- Honey - 10.6 oz
- Almond - 2.8 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Whisk 4 egg yolks with 220 grams of sugar until pale. Add sour cream and baking soda, and mix well.
Step 3
Melt the butter, pour it into the egg mixture, and stir well.
Step 4
Then add the flour and knead the dough. Cover the dough with plastic wrap and refrigerate for 1 hour.
Step 5
Place the walnuts in an oven preheated to 356°F for 10–15 minutes. Then, chop the nuts with a knife, making sure not to chop them too finely. It's better not to use a blender for this.
Step 6
Combine the walnuts with 400 grams of sugar and the egg whites, stirring until the sugar has dissolved.
Step 7
Divide the dough into three equal parts, rolling each one out into a thin sheet. Place the first sheet of dough on a baking tray, evenly spread half of the nuts on top, cover with a second sheet of dough, add the remaining nuts, and then place the third sheet of dough on top. Seal the edges well to prevent the syrup from leaking out.
Step 8
Brush the pie with egg yolks, use a knife to score the surface into diamond-shaped portions without cutting all the way through. Place an almond on each diamond. Bake the baklava in the oven for 30 minutes.
Step 9
Pour honey over the hot baklava and spread it evenly with a brush.
Step 10
Return to the oven for another 10 minutes.
