Description
It's great to have ready-made shortcrust pastry in the fridge, so preparing the pie will take just an hour.
Ingredients
- Donut Peaches - 17.6 oz
- Cottage cheese - 8.8 oz
- Honey - 2 spoons
- Meyer Lemon Juice - 2 spoons
- Wheat Flour - 8.8 oz
- Butter - 3.5 oz
- Almond - 2.1 oz
- Whole egg - 1 piece
- Salt - a pinch
- Sugar - 5.3 oz
- Starch film - 1 tablespoon
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the cold butter into cubes and place them in the mixing bowl.
Step 3
Add the wheat flour, almond flour, 50 grams of sugar, and salt.
Step 4
Blend everything in a mixer until you achieve a fine buttery crumb.
Step 5
Mix the yolk with 4 teaspoons of cold water. Pour the liquid into the dough.
Step 6
Knead the dough by hand until it forms a tight, elastic ball. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 3 hours.
Step 7
Mash the cottage cheese with a fork until it becomes creamy. If the peaches are not very sweet, you can add a bit of sugar to the cottage cheese, no more than 50 grams.
Step 8
In a pot, bring water to a boil, add the peaches for 30 seconds, then transfer them to ice water.
Step 9
Peel the peaches, cut them in half, and remove the pits. If the peaches are large, slice them into wedges.
Step 10
Sprinkle the fruits with the remaining sugar and let them sit for 10 minutes.

Then drain the peaches in a colander, allow the excess liquid to drip off, sprinkle with cornstarch, and mix thoroughly.
Step 12
Take the dough out, knead it with your hands until it becomes elastic, and roll it out into a sheet about 4 mm thick.

Press the dough into a round mold, making sure to cover the bottom and sides evenly, then trim any excess dough. Prick the dough with a fork.

Spread the cottage cheese evenly over the dough. Place the peaches cut side down on top of the cottage cheese. Bake in a preheated oven at 356°F for 40 minutes.

Meanwhile, mix the honey and lemon juice.

Brush the hot baked pie with a mixture of honey and lemon juice.

Serve hot or cold.
