Socca Flatbreads
Ingredients
- Chickpeas - 4.4 oz
- Water - 8 fl oz
- Olive Oil - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Herbes de Provence - to taste
Step by Step guide
Step 1
You can use ready-made chickpea flour. If using whole chickpeas, grind them in a coffee grinder or blender. Sift the resulting flour.
Step 2
Add water, 3 tablespoons of oil, salt, pepper, and herbs. Mix well. The dough should have a consistency similar to pancake batter. Let the dough rest for 1 hour.
Step 3
Preheat the oven to 220-464°F. Pour the dough onto a baking sheet or into a mold. The larger and flatter the baking sheet, the less time the flatbread will take to bake.
Step 4
Bake for 5-10 minutes. The top of the flatbread should be nicely browned, while the bottom remains soft.
Step 5
Serve topped with chopped vegetables and/or cheese.
