Description

For decoration, you can sprinkle the sochiki with powdered sugar.

Ingredients

  • Wheat Flour - 8.5 oz
  • Chicken Egg - 2 pieces
  • Butter - 3.5 oz
  • Cottage cheese - 7.1 oz
  • Powdered Sugar - 3.5 oz
  • Sour Cream - 0.7 oz
  • Baking Powder - ¼ spoons
  • Salt - a pinch

Step by Step guide

Step 1

For the filling, we will need 200 g of cottage cheese, 40 g of powdered sugar, 30 g of flour, 20 g of sour cream, and half an egg yolk (save the other half for brushing, mixing it immediately with water to prevent the yolk from drying out). Combine all the ingredients in a bowl and mix with a mixer.

Step 2

For the dough, combine softened butter, 1 egg, salt, and the remaining powdered sugar in a bowl. Beat well with a mixer.

Step 3

Mix the remaining flour with the baking powder and add it to the dough. Stir well.

Step 4

Shape the dough into a ball. Divide it into 6 pieces (about 70 g each, if you have a scale). Roll each piece into a short sausage shape. Then, roll it out on a floured surface.

Step 5

Place 45 grams of filling on one half, then cover it with the other half so that the filling is slightly visible.

Step 6

Place the pastries on parchment paper or a greased baking sheet. Brush the pastries with a mixture of egg yolk and water.

Step 7

Bake at 392°F for 25 minutes.
