Description

To make this bread, you first need to prepare a <a href="https://eda.ru/recepty/vypechka-deserty/zakvaska-dlya-hleba-levito-madre-138635">traditional Italian sourdough starter</a>.

  • Sourdough Bread - 7.1 oz
  • Wheat Flour - 17.6 oz
  • Water - 15 fl oz
  • Olive Oil - 0 fl oz
  • Salt - 0.4 oz

Step by Step guide

Mix the starter, flour, and 350 ml of cold water. Cover with plastic wrap and place in a cool spot for 40 minutes.

Add salt and a little cold water to the dough; continue kneading while gradually adding more water. Periodically allow the dough to rest in a cool place for 5–10 minutes. The kneading process will take about 30 minutes. Well-kneaded dough should stretch easily without tearing.

Add olive oil to the dough and mix it in. Then transfer the dough to a greased container, cover it with plastic wrap, a lid, or a damp cloth, and let it rest for 30 minutes.

After 30 minutes, the dough needs to be folded. To do this, take one edge of the dough, stretch it upwards, and then bring it to meet the opposite edge. Rotate the bowl with the dough 90 degrees, stretch and fold again, turn it another 90 degrees, fold, then turn once more and fold the fourth side of the dough. Cover and let it rest for another 30 minutes.

Fold the dough like this every 30 minutes for 4 hours. Gradually, it will increase in volume and puff up, making the last folds more challenging.

Generously dust the countertop with flour and carefully place the dough on it. Gently stretch the dough on the surface to form a rectangle. Sprinkle some flour on top, then cut it into three equal pieces, also dusting the cut edges with flour.

Line a baking tray with a linen kitchen towel. Generously sprinkle flour on it as well. Carefully transfer the future ciabattas onto the towel, separating them with its folds. Cover with a second towel, which can also be dusted with flour to prevent the bread from sticking. Let the dough rest for another hour.

While the dough is rising, prepare the oven. Place an inverted baking sheet in the center of the oven. Put a heatproof container filled with water at the bottom of the oven (this will create steam), and preheat the oven to the highest possible temperature.

Transfer the ciabatta to a baking sheet lined with parchment paper or a silicone baking mat and place it in the preheated oven. Bake for 7 minutes.

After 7 minutes, remove the container with water from the oven and reduce the temperature to 428°F. Bake for an additional 10–15 minutes. Once the ciabattas are done, transfer them to a wire rack and allow them to cool completely.
