Spiced Apple Granita with Bourbon

Ingredients

  • Granny Smith apples - 6 pieces
  • Water - 4 fl oz
  • Cider - 12 fl oz
  • Brown Sugar - 7.1 oz
  • Cinnamon - 1 piece
  • Ground Nutmeg - a pinch
  • Clove - 1 piece
  • Grated Ginger Root - 0.1 oz
  • Meyer Lemon Juice - 1 fl oz
  • Vanilla Pod - 1 piece
  • Bourbon - 0 fl oz

Step by Step guide

Step 1

Split the vanilla pod lengthwise and scrape the seeds from the inside with a knife. Set aside. Peel the apples and remove the core with seeds. Cut them into medium-sized pieces, drizzle with lemon juice, and set aside.

Step 2

In a heavy-bottomed saucepan, combine the water, cider, and sugar. Place over medium heat and cook until the sugar dissolves. Once dissolved, add all the spices, including the vanilla seeds and the pod itself. Add the apples to the syrup and cook over medium heat for 20–30 minutes until soft. Remove from heat, use a slotted spoon to take out the apples, and transfer to a deep plate. Strain the syrup through a sieve to remove the spices. Rinse the vanilla pod, dry it, and place it in a sugar bowl. Mash the apples into a chunky puree with a potato masher. Chill both the puree and syrup separately in the refrigerator for three hours. Afterward, combine both, add the bourbon, mix well, pour into an ice cream container, and place in the freezer. Stir the granita every half hour until fully set.

Step 3

Before serving, let the granita soften slightly, then serve. Present it in a dessert glass with shortbread cookies.
