Description

Spiced Baklava is a delightful dessert that combines the rich flavors of nuts and spices, layered between sheets of flaky pastry. This version, inspired by traditional recipes, incorporates a blend of cinnamon and cardamom for an aromatic twist. Perfect for serving at gatherings or enjoying with a warm cup of tea, this baklava is sure to impress your guests.

Ingredients

  • Nuts - 10.6 oz
  • Puff Pastry - 14.1 oz
  • Sugar - 10.6 oz
  • Honey - 7.1 oz
  • Butter - 3.5 oz
  • Chicken Egg - 1 piece
  • Cardamom - 1 tablespoon
  • Cinnamon - 1 tablespoon

Step by Step guide

Step 1

Since our dough is ready, we leave it to thaw (if it just came from the refrigerator).

Step 2

Meanwhile, prepare the filling.

Step 3

Chop the nuts and mix them with sugar in a 50/50 ratio. I use about 350–400 g of each.

Step 4

It's best to grind using a special nut grinder or a meat grinder, but since I have neither, I had to use a food processor. The downside is that if you over-process, you'll end up with a nut paste, and if you under-process, you'll have large chunks.

Step 5

Add a teaspoon of cardamom and cinnamon. It's better to use ground cardamom.

Step 6

Roll out the dough. A 400-gram package usually contains 2 sheets.

Step 7

One sheet is divided into 2 parts — these will be the bottom and top layers of the baklava (they should be slightly thicker than the others).

Step 8

Divide the second piece into 4 parts — these will be the middle layers of our baklava.

Step 9

We begin layering in a buttered baking dish (you can also use parchment paper, like I do). Before layering, melt the butter that we will use to brush the layers of dough. Place the first layer.

Step 10

Brush the dough with melted butter and sprinkle with the prepared filling. Make the filling layer generous but not too thick. Then place the next layer of dough, brush it with butter, sprinkle with filling, and so on — repeat for all layers.

Step 11

Brush the last layer with beaten egg yolk (for a nice golden crust). Now, the baklava needs to be cut (it's difficult to do this after baking). It's usually cut into diamond shapes, but I prefer square pieces.

Step 12

Preheat the oven to 392°F. Place the baklava in the oven for 30 minutes. While the baklava is baking, prepare the syrup. In 3/4 cup of warm water, dissolve honey (4–5 tablespoons). If the honey does not dissolve easily, you can gently heat the container you are using over a double boiler. If you are making it without honey, then dissolve 1 cup of sugar in 0.5 cup of warm water.

Step 13

After 30 minutes, remove the baklava from the oven and generously pour the prepared syrup over it. The baklava should almost be submerged in the syrup. Let it cool and soak in the syrup.
