Ingredients
- Bananas - 4 pieces
- Wheat Flour - 3.5 oz
- Light Raisins, Seedless - 1.8 oz
- Farm fresh eggs - 4 pieces
- Powdered Sugar - 2 tablespoons
- Ground Cinnamon - ½ teaspoon
- Dried Rosemary - 1 teaspoon
- Cream 22% - 4 tablespoons
- Butter - 2 tablespoons
- Cardamom - a pinch
- Baking Powder - 1 teaspoon
- Meyer Lemon Juice - 2 tablespoons
Step by Step guide
Step 1
Soak the raisins in hot water.
Step 2
Blend the bananas until smooth, adding a tablespoon of lemon juice.
Step 3
Separate the egg whites from the yolks. Whip the egg whites to a thick foam with the powdered sugar and a tablespoon of lemon juice, then add a teaspoon of dried mint, half a teaspoon of cinnamon, and a couple of pinches of cardamom. Beat the yolks with sugar, then add the cream and most of the butter, previously melted in the microwave or in a water bath.
Step 4
Combine the banana puree with the egg whites and yolks into a uniform mixture, gradually folding in the flour. When the batter is thick enough, add the raisins.
Step 5
Pour the batter into buttered molds and bake in a preheated oven at 356°F for about 35 minutes.
