Ingredients
- Star anise - 3 pieces
- Water - 17 fl oz
- Champagne Vinegar - 1 qt
- Raw cane sugar - 17.6 oz
- Cinnamon - 1 piece
- Green peppercorns - 1 tablespoon
- Lemon - 1 piece
- Juniper Berries - 2 teaspoons
- Conference Pear - 20 pieces
- Ground clove - 5 pieces
- Fresh Rose Hips - 2 sprigs
Step by Step guide
Step 1
In a saucepan, combine the vinegar, water, sugar, star anise, cinnamon, black peppercorns, sliced lemon peel, cloves, and juniper berries. Bring to a boil.
Step 2
Meanwhile, peel the pears, leaving the stems intact, and place them in the boiling marinade. Reduce the heat, cover, and simmer for 10-15 minutes until tender. Transfer the pears to a dish.
Step 3
Return the marinade to the heat, bring to a boil, and cook for another 4-5 minutes until the liquid slightly evaporates and thickens.
Step 4
Divide the pears into 2 sterilized 1.5-liter jars, pour the marinade over them, and distribute the spices between both jars. Place a sprig of rosemary in each jar. Seal tightly.
