Ingredients
- Wheat Flour - 3 cups
- Baking Powder - 1 teaspoon
- Ground Cinnamon - 1 teaspoon
- Ground clove - 1 teaspoon
- Grated Ginger Root - 1 teaspoon
- Ground Nutmeg - 1 teaspoon
- Cardamom - 1 teaspoon
- Salt - 1 teaspoon
- Farm fresh eggs - 4 pieces
- Sugar - 2 cups
- Pumpkin - 14.1 oz
- Orange zest - 1 piece
- Vegetable Oil - 8 fl oz
- Vanilla extract - 1 teaspoon
- Mascarpone Cheese Unagrande - 7.1 oz
- Chopped almonds - 1.1 oz
- Shelled pumpkin seeds - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Grease and flour two 20 cm baking pans and set aside.
Step 3
In a bowl, mix together the flour, baking powder, cinnamon, cloves, ginger, cardamom, nutmeg, and salt, and set aside.
Step 4
In another large bowl, combine the eggs, sugar, pumpkin, vegetable oil, vanilla, and orange zest.
Step 5
Gradually add the flour mixture to the egg mixture and mix well. Divide the batter evenly between the prepared pans.
Step 6
Spoon the mascarpone on top of the batter, spacing it 5 cm apart, and then use the tip of a thin knife to gently press the mascarpone into the batter. Sprinkle with pistachios and pumpkin seeds on top.
Step 7
Bake for 35–40 minutes, checking for doneness with a toothpick.
