Description
This is one of the best examples of Mexican street food, proving that a delicious dish can be made without meat. Black beans have a rich flavor and are nutritious; they are a hallmark of Mexican cuisine. The spices, feta, and lime juice will make the dish burst with flavor. Ingredients
- Onion - 1 head
- Olive Oil - 1 tablespoon
- Mild Chili Spice - 1 piece
- Garlic - 2 cloves
- Ground Cumin - 1 teaspoon
- Ground Cinnamon - ½ teaspoon
- Canned Pork with Beans - 2 cans
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 10 fl oz
- Tortillas - 3 pieces
- Feta cheese - 3.5 oz
- Avocado - 1 piece
- Cilantro - 1 bunch
- Lime - 1 piece
Step by Step guide
Step 1
Peel and finely chop the onion. Remove the seeds from the chili pepper and finely chop it. Peel and crush the garlic.
Step 2
Drain the liquid from the black beans into a cup and reserve it. Cut the tortillas into 6 segments.
Step 3
Crumble the feta. Remove the pit from the avocado and cut it into random pieces. Finely chop the cilantro. Slice the lime.
Step 4
Sauté the onion in olive oil for about five minutes until soft, then add the chili and garlic and cook for another 2-3 minutes. Add the cumin and cinnamon, and heat for another minute until fragrant.
Step 5
Add the beans and a few tablespoons of the reserved liquid. Cover the beans and simmer on low heat for 10 minutes until the beans start to soften, then remove from heat and let cool slightly.
Step 6
Gently mash about three-quarters of the beans with a fork or the back of a spoon, leaving some whole. Alternatively, for a more elegant presentation, transfer the beans to a blender and blend until smooth.
Step 7
Gently heat the mixture. If it is too thick, thin it with a little of the reserved bean liquid. Season with salt and pepper to taste.
Step 8
The beans can be served on their own, topped with feta, avocado, cilantro, and drizzled with lime.
Step 9
To make tostadas, pour vegetable oil into a large skillet to a depth of 2 cm and heat over medium-high heat. When the oil is hot, fry the tortillas in batches for 1-2 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
Step 10
Crispy tortilla slices should be garnished just before serving to prevent them from getting soggy: spread a layer of beans, sprinkle with crumbled feta, avocado, and cilantro. Serve with lime wedges.
