- Ground clove - ¼ teaspoon
- Brown Sugar - 2.6 oz
- Lemon - 1 piece
- Orange zest - 1 piece
- Butter - 3.9 oz
- Chicken Egg - 1 piece
- Candied fruits - 1.8 oz
- Activated Baking Soda - 1 teaspoon
- Meyer Lemon Juice - 1 tablespoon
- Powdered Sugar - 6.2 oz
- Candied fruits - 0.2 oz
Step by Step guide
Step 1
Grate the zest of one lemon and one orange.
Step 2
Warm the honey slightly.
Step 3
In a bowl, sift the flour and spices, add the brown sugar and the grated zest of lemon and orange. Rub in the butter, mix in the beaten egg and warm honey.
Step 4
Dissolve the baking soda in 3 tablespoons of cold water, pour it into the dough. Mix well, add the candied fruits, and transfer the dough to a buttered baking pan.
Step 5
Bake at 338°F for about 50 minutes. Wait for 10 minutes and turn the cake onto a wire rack.
Step 6
Prepare the glaze. Sift the powdered sugar, add 2 tablespoons of warm water and lemon juice, and mix. The mixture should thicken slightly.
Step 7
Drizzle the glaze over the surface of the cake. Decorate with pieces of ginger.
