Spinach and Blue Cheese Pies
Ingredients
- Blue Cheese - 7.1 oz
- Fresh Spinach Leaves - 17.6 oz
- Olive Oil - 2 tablespoons
- Butter - 1 teaspoon
- Ground Black Pepper - a pinch
- Sea Salt - 1 teaspoon
- Wheat Flour - 11.3 oz
- Dry yeast - 0.2 oz
- Sugar - a pinch
Step by Step guide
Step 1
Prepare the dough: mix 300 g of flour with yeast, a pinch of salt, and sugar, pour in 1 cup of water, and knead. Cover the bowl with plastic wrap and let it rise for 30 minutes.
Step 2
Sprinkle the cutting board with the remaining flour and lightly knead the dough. Roll it out and place it on a greased round baking tray with olive oil.
Step 3
Press the dough with your fingertips and let it rest for a few more minutes.
Step 4
Bake in a preheated oven for 25 minutes.
Step 5
Remove the dough from the oven, cut it into four parts, and then cut each part in half lengthwise.
Step 6
Melt the butter and olive oil in a deep skillet, add the spinach, season with salt and pepper. Cover the skillet and simmer on very low heat for 5–7 minutes.
Step 7
Cut the cheese into small cubes.
Step 8
Place spinach and diced cheese on the bottom halves of the pies.
Step 9
Cover with the top halves.
Step 10
Place the pies on a heated skillet, cover with a lid, and fry for 2–3 minutes on each side.
